I love strawberry shortcake in the spring when the strawberries are in season and are sweet and juicy!! My favorite recipe is the classic sweet biscuit with whipped cream and sweetened strawberries. It is sooo good!

I make the biscuit in a big round and slice it into pie shaped slices, cut it in half and top with strawberry jam, then the sliced lightly sweetened strawberries and lots of whipped cream. Then top with the other half and garnish with more whipped cream and a strawberry. The strawberry jam intensifies the flavor, but it can be omitted if desired. The bicuit recipe follows:

Big Shortcake Biscuit

2 c. flour

1/2 tsp. salt

1/2 tsp baking soda

1 1/2 tsp. baking powder

1/4 c. sugar

1/2 c. chilled unsalted butter (if using salted cut the salt in half, use 1/4 tsp instead)

3/4 c. buttermilk (make your own by putting 2 tsp of vinegar or lemon juice in measuring cup, add milk to make 3/4 cup–let sit a bit before using)

1/2 tsp. vanilla

The easiest way to mix this is to put all the dry ingredients in a food processor with the flour in first. Pulse a couple times and cube up butter and add that in and pulse until it is all cut in and there are not any pieces of butter visible. Pour out into a mixing bowl and stir in milk. Dough will be very soft. Pour on a greased cookie sheet and shape into a round and pat down–it should be about 1 inch thick. Sprinkle with course sugar if desired and bake at 375 degrees for about 20-25 minutes or until lightly browned and a toothpick in the center comes out clean.

Cool and use as described above.

You can use a pastry blender if you don’t have a food processor–it will take a bit longer and you will burn a few calories–so you can eat more later 🙂

I like the angel food cake and pound cake base for shortcake, too, but the biscuit is the best in my opinion!! To make an elaborate presentation and if it is all going to be eaten at one time, you can cut the whole bisuit in half (like a layer cake) and spread it with the jam, top with a layer of vanilla or strawberry ice cream, cover with the sliced strawberries, smother with the whipped cream, top with the biscuit and more whipped cream and strawberries. Slice into wedges and serve. I did this for my mother-in-law last year for Mother’s Day. It was really good!!
